With that been said, let’s dive into the ingredients and preparation of Nigerian party jollof rice and chicken sauce.
INGREDIENTS
- Rice (long or short grain)
- Canned tomatoes, sweet corn
- Diced hotdogs
- Pepper (rodo, tomato, shombo)
- Seasoning cubes (know chicken)
- Salt
- Vegetable oil
- Curry masala, thyme, bay leaves
- Spices (jollof spicity or maggi jollof)
- Onions
- Chicken
- Butter or margarine
PREPARATIONS
To prepare Nigerian party jollof depends on either you are cooking for your family or you are cooking it for an occasion.
Let’s hope into cooking our sumptuous meal, Nigerian party jollof rice and chicken sauce.
Step 1
Wash the chicken with salt and water, rinse with water. After rinsing, put your chicken in a pot, add salt, seasoning cubes, curry masala, thyme onions and a little water in it.
Set on heat and let it boil for 12-15 minutes.
Step 2
Put the chicken in a bowl.
Step 3
Blend the rodo, tomato and shombo. After blending pour in another bowl.
Step 4
Parboil rice for about 10 minutes. Then pour out the rice into a sieve and rinse with ordinary water
Step 5
Pick out the boiled tasty chicken and deep- fry, set aside.
Step 6
After frying the chicken,reduce the quantity of the oil and add canned tomatoes let it fry for like 2 minutes and add sliced onions to it . Stir do 2 minutes, add the ground pepper.
Step 7
Fry the tomato sauce for about 20 minutes.
Fry until you notice the oil continues to boil in the spoon and also the tomatoes turning dark.
Step 8
Once the tomato is well fried, add the chicken water to the fried tomato, curry masala, thyme,salt to taste and seasoning cubes.
Step 9
Add the fried chicken into the sauce and stir. Cover the pot and let the sauce enter the fried chicken for about 5 minutes. Remove the chicken and put in a cooler.
Step 10
After removing the chicken sauce, add water into it,add another seasoning cubes. Add butter or margarine to it. Cover the pot and let it boil for 10 minutes.
Step 11
Add the parboiled rice.
Step 12
Add the bay leaves. Cover and allow the rice cook on low heat for 30-35 minutes. You can add water occasionally if desired or necessary.
Lastly, add your canned sweet corn and stir.
Step 13
Serve your nutritious and sumptuous Nigeian party jollof rice with chicken sauce in a plate.
