*PREPARATION:
1)Prepare the ingredients -start by cleaning and cutting the assorted meat and fish into small sized pieces.Rinse the vegetables throughly and chop into smaller pieces.Grind the Egusi seeds into a smooth paste using a blender or grinding machine.
2)Cook the meat and fish:In a large pot,place the assorted meats and fish,add water and some seasoning and bring to a boil.Allow it to cook until tender,summing off any foam that rises to the surface.Once cooked,remove the meats and fish from the pot and set aside.
3)Prepare the Egusi paste:Heat the palm oil in a separate pot over medium heat.Add the chopped onions and sauté(fry) until translucent.Gradually add the ground Egusi paste,stirring continuosly to prevent lumps from forming.Cook the Egusi paste until it thickens and releases its oli,forming a golden brown colour.
4)Add seasoning and flavours:Season the boiled Egusi paste with ground crayfish,pepper,seasoning cubes and salt to taste.Stir well to incorporate the flavours,allowing the mixture to simmer for a few minutes.
