It is often said that the way to a man’s heart is food. I know there are several food lovers like me all over the world but trust me when I say African dishes are one of the best meal you can ever try and it is definitely one way to keep your marriage or relationship safe and healthy.
There are different varieties of African dishes e.g Yam porridge, Egusi soup with Pounded yam, Party jollof, Asun rice and many more but today we would be taking a tour to Akwa-Ibom of the Efik tribe in Nigeria.
It is said that people from these tribe cook the best meal and eat the best dishes so let us take a look at one of their best soups which is called “AFANG SOUP.”
Afang soup is a vegetable soup that is made out of the richness of African ingredients, this soup is mostly eaten and made by the Efik tribe of the Nigeria country and it is enjoyed with Fufu one of Africa’s best swallow.
Afang leaf is a dry and hot leaf and must be thoroughly washed and prepared to be enjoyed.
To enjoy this soup, there are quite a number of ingredient use in making this delicacy so let us look at the ingredient use in making Afang soup.
INGREDIENTS USE IN MAKING AFANG SOUP:
1. Water leaf
2. Afang leaf
3. Blended Crayfish
4. Blended dry pepper
5. Stock fish
6. Cow skin (Ponmo)
7. Meat
8. Dry fish
9. Palm oil
10. Onions
11. Seasoning
12. Salt
After getting all of these ingredients it is only right to prepare them before starting the preparation of the dish itself in order to cook and get the best result. So let us look at the procedures in preparing the ingredients for Afang soup.
PROCEDURES IN PREPARING THE INGREDIENT FOR MAKING AFANG SOUP.
Ingredients are one the main aspect of this dish so the preparation of the ingredients must be taken into consideration and extra care must be added when preparing the ingredients because you don’t want to feel the taste of sand when eating the meal.
Prepare your Afang leaf:Wash your Afang leaf properly, dry it by putting it in a transparent sack and shake the water off, Spread it on a tray or sack for fresh air, do not spread it under sun. When it is dried, slice it into minute or tiny pieces.
Pound it with a mortar or blend it with a hand machine, after this, pour it into a clean plate and keep aside.
Prepare your water leaf: pick out your water leaf from the stick, wash your water leaf before slicing it; it is advisable to wash your water leaf before slicing it because of sand and tiny insects, after washing the leaf, cut into tiny pieces.
NOTE: The quatity of the water leaf determines the quantity of the Afang leaf.
Wash your meat well and season it: Season your meat in a clean pot with diced onions, salt and maggi. Some people love to add grated fresh pepper when boiling their meat but it is not necessary but can be used to give your meat a unique taste.
Note: Do not boil your meat with water,the meat generates it water by itself and it is advisable that the meat does not get too soft so it does not cause irritation while eating.
Prepare your fish: wash the body of the fish with salt and water, remove the bones and other dirt from the fish, put the fish in a bowl, add a little salt and warm water in order to rinse it well then rinse it out and put it in a neat bowl or plate and put it aside.
Prepare your crayfish: sieve the dirt out of your crayfish, blend it with a blender and pour it into a neat plate and put aside.
Note: When using crayfish, it is advisable to use little salt and seasoning in your soup.
Prepare your stockfish: Rinse the body of your stock fish properly, boil it in a neat pot with enough water, do not add salt when boiling your stock fish, make sure it is soft and tender before pouring it into a bowl with the stock.
Prepare your cowskin: Rinse your cowskin with water and salt, wash the outer and inner part of your cowskin properly, dice your cowskin into a neat bowl, add a pinch of salt and warm water.
Prepare your dry pepper:Get your blended dry pepper ready by blending it with a blender or mortar, some people like to get the blended dry pepper directly from the market while others like to get the pepper fresh and blend it themselves so the choice is yours.
NOTE: Afang leaf is a hot leaf, it has a lot of heat in it so it is advisable and required that while making the soup, pepper must not be too much and individuals with internal heat issues are not adviced to eat it regularly.
So let us move to the moment we have all been waiting for, Afang soup does not take a lot of time on fire but the preparation of the ingredients is key to getting the desirable result you need or want.
HOW TO PREPARE AFANG SOUP:
1. Pour your water leaf with dice onions into a pot and boil it to dry. The pot must be left open to avoid sticky taste of the soup while eating.
2. When the water leaf is ready, Add your meat and it stock, stockfish and it stock, blended crayfish, Cow skin, Blended dry pepper, Seasoning and Salt.
Note: The stock from the meat and stockfish serve as water use in preparing the soup, so if the stock is a lot then it should be added moderately and seasoning and salt must be added with extra care because of the crayfish and the stock use in preparing the soup.
3. Stir properly and cover the pot, leave it to cook to taste.
4. After it might have cook to taste, add your Afang leaf and palmoil immediately and properly stir.
5. Cook till the Afang is well cooked because the leaf is a hard leaf but also note that the soup must not overstay on fire.
6. Serve with any swallow of your choice but preferably Fufu goes with Afang soup and it enable you savour the taste of the soup.
